- 1/2 cup Crushed Candy Canes

- 1/2 cup Brown Sugar
- 2 large Eggs
- 1 cup All-Purpose Flour

Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
- In a medium microwave-safe bowl, combine the unsalted butter and half of the semi-sweet chocolate chips. Microwave in 30-second intervals, stirring well after each, until melted and smooth. Let cool slightly.
- In a large mixing bowl, whisk together the granulated sugar, brown sugar, and eggs until light and fluffy. Stir in the peppermint extract and then mix in the cooled chocolate-butter mixture until just combined.
- In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the remaining semi-sweet chocolate chips.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
- Once chilled, use a cookie scoop to portion out the dough, rolling them into balls and placing them 2 inches apart on the baking sheets. Bake for 9-11 minutes until the edges are set but the centers are still soft.
- Immediately sprinkle crushed candy canes over the warm cookies and let cool on the baking sheets for 5 minutes before transferring to a wire rack.
