This Roasted Tomato and Garlic Ricotta Pasta combines the sweetness of roasted tomatoes and garlic with creamy ricotta for a comforting meal. It’s simple to prepare yet indulgent enough to impress your family or guests.

- 2 cups halved cherry tomatoes
- 5–6 whole garlic cloves (unpeeled)
- 2 tablespoons olive oil
- Salt
- Pepper
- 1 cup ricotta cheese
- Pasta (spaghetti or penne, or any preferred type)
- Fresh basil
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine 2 cups of halved cherry tomatoes and 5-6 whole garlic cloves (unpeeled). Drizzle with 2 tablespoons of olive oil, and sprinkle with salt and pepper. Toss to coat.
- Spread the tomato and garlic mixture onto a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until the tomatoes are blistered and the garlic is soft.
- While the tomatoes and garlic are roasting, bring a large pot of salted water to a boil and cook your pasta according to package instructions until al dente. Reserve ½ cup of pasta water and then drain the pasta.
- Once the tomatoes and garlic are done, remove them from the oven. Squeeze the roasted garlic out of its skins into a large bowl. Add 1 cup of ricotta cheese to the bowl and mix well. If the mixture is too thick, add some reserved pasta water to achieve your desired consistency.
- Add the cooked pasta to the bowl with the ricotta sauce, along with the roasted tomatoes. Toss everything together until the pasta is well coated. If needed, adjust the consistency with more pasta water.
- Tear fresh basil leaves and sprinkle them over the pasta. Toss gently to combine.
