- 1 cup shredded mozzarella

Instructions
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin or line it with muffin liners to prevent sticking.
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and a pinch of salt. Whisk them together until evenly mixed.
- In another bowl, whisk together 1 cup of milk, 2 large eggs, and 1/4 cup of melted butter or oil until well combined.
- Add 1 cup of pizza sauce to the wet ingredients and mix well.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined.
- Fold in 1 cup of shredded mozzarella and 1/2 cup of diced pepperoni (or your chosen toppings) until evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Place the muffin tray in the oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
