  • 2 large eggs

  • 1 cup shredded mozzarella
  • 1/2 cup diced pepperoni or other toppings

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin or line it with muffin liners to prevent sticking.
  3. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and a pinch of salt. Whisk them together until evenly mixed.
  4. In another bowl, whisk together 1 cup of milk, 2 large eggs, and 1/4 cup of melted butter or oil until well combined.
  5. Add 1 cup of pizza sauce to the wet ingredients and mix well.
  6. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  7. Fold in 1 cup of shredded mozzarella and 1/2 cup of diced pepperoni (or your chosen toppings) until evenly distributed throughout the batter.
  8. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  9. Place the muffin tray in the oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
