Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in 2 large eggs and 1 teaspoon of vanilla extract until fully combined.
- In a separate bowl, whisk together 3 cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
- On a floured surface, roll out the dough to about 1/4-inch thickness. Use a cookie cutter to cut out rectangular shapes.
- Place half of the cut rectangles on a baking sheet lined with parchment paper. Spoon about 1 teaspoon of strawberry jam in the center of each rectangle, leaving a border around the edges.
- Place the remaining rectangles on top of the jam-filled ones. Press the edges with a fork to seal them closed.
- Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, you can drizzle a simple icing made of powdered sugar and milk over the cookies for that classic Pop Tart look. Add sprinkles on top for extra flair!
