  • 46 ounces thinly sliced beef prosciutto
  • Fresh mozzarella balls (bocconcini or ciliegine), drained
  • 2025 medium-sized fresh basil leaves
  • 1015 cherry or grape tomatoes, halved (optional)
  • Good quality olive oil, for drizzling
  • Freshly ground black pepper, to taste
  • Balsamic glaze, for drizzling

Instructions

  1. First things first, drain your fresh mozzarella balls (bocconcini or ciliegine) very well. Spread them out on a plate lined with a paper towel and gently pat them dry.
  2. Gently wash your fresh basil leaves and pat them completely dry. If you're using cherry or grape tomatoes, wash them and halve them lengthwise.
  3. Lay a slice of beef prosciutto flat on a clean surface. Place one drained mozzarella ball (or half a bocconcini) near one end of the prosciutto slice.
  4. Take a fresh basil leaf and place it directly on top of the mozzarella ball.
  5. If you’re including tomatoes, place one halved cherry or grape tomato cut-side down against the mozzarella and basil.
  6. Carefully but firmly roll the beef prosciutto around the mozzarella, basil, and tomato.
  7. For extra security, you can thread a small decorative toothpick or skewer through the center of each bite.
  8. As you finish assembling each bite, arrange them neatly on a serving platter.
  9. Just before serving, drizzle a little bit of good quality olive oil over all the bites, then generously drizzle with your balsamic glaze, and give them a light dusting of freshly ground black pepper.
