  • Yield: 4 servings 1x

Description

This Easy Creamy Ramen Recipe transforms instant ramen into a luxurious, creamy dish that offers pure comfort in every slurp. With a rich broth and savory toppings, it’s perfect for a cozy night in or a delicious pick-me-up.

Ingredients

Scale
  • 2 packets of instant ramen noodles
  • Water or low-sodium chicken or vegetable broth
  • Whole milk (or oat milk, soy milk, or almond milk)
  • Cream cheese (full-fat or reduced-fat)
  • Freshly minced garlic
  • Grated ginger
  • Ground beef (or thinly sliced beef, cooked shredded chicken, or firm tofu)
  • Low-sodium soy sauce
  • White (shiro) miso paste
  • Unsalted butter
  • Soft-boiled eggs (optional)
  • Thinly sliced scallions (green onions)
  • Chili oil or chili crisp (optional)
  • Fresh spinach or corn (optional)
  • Toasted sesame seeds (optional)

Instructions

  1. Prepare Your Aromatics and Beef: Mince the garlic and grate the ginger. If using ground beef, break it into small pieces; if using thinly sliced beef, have it ready.
  2. Cook the Beef: In a medium pot or deep skillet, melt about half a tablespoon of butter over medium-high heat. Add the ground beef and cook until browned and cooked through. If using thinly sliced beef, sear it quickly, then set aside.
  3. Sauté the Aromatics: Reduce heat to medium, add the remaining butter, and toss in the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  4. Build the Creamy Broth: Pour in the chosen liquid base and bring to a gentle simmer. Whisk in the cream cheese until melted, then stir in the milk, ramen seasoning packets, and soy sauce. If using miso paste, whisk it in now. Adjust seasonings to taste.
  5. Cook the Noodles: Add the ramen noodles to the simmering broth and cook according to package directions, usually 2-3 minutes for instant noodles.
  6. Assemble and Serve: Divide the noodles and broth into serving bowls. If using thinly sliced beef, add it back to the bowls.
  7. Add Your Favorite Toppings: Arrange desired toppings over the ramen, such as soft-boiled eggs, scallions, corn, spinach, chili oil, or sesame seeds. Serve immediately.
