Instructions

Peel your carrots and slice them into uniform rounds or diagonal pieces, about 1/4-inch thick. Pat your chicken breasts (or thighs) thoroughly dry with paper towels. Season them generously on both sides with salt, freshly ground black pepper, minced garlic, and fresh herbs. Gently press the herbs and garlic into the chicken so they adhere.
  2. Start the Potatoes & Sear the Chicken: Place your pot of salted potatoes over high heat and bring to a boil. Once boiling, reduce heat to medium and simmer until fork-tender, about 15-20 minutes. While the potatoes boil, heat a large oven-safe skillet over medium-high heat with a tablespoon of olive oil. Once shimmering, carefully add your seasoned chicken. Sear for 5-7 minutes per side until beautifully golden brown and a crust forms.
  3. Finish the Chicken & Start the Carrots: If your chicken isn't cooked through after searing, transfer the skillet to a preheated oven at 375°F (190°C) and bake for another 10-15 minutes, or until an internal temperature of 165°F (74°C) is reached. Remove chicken from the skillet, tent loosely with foil, and let it rest for at least 5-10 minutes. In a separate medium skillet or saucepan, melt 2 tablespoons of butter over medium heat. Add the sliced carrots and cook for 2-3 minutes, stirring, until they start to soften slightly. Add the honey, a splash of water, salt, and pepper to the carrots.
