Instructions

  1. In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, ground cinnamon, and ground nutmeg. Whisk until well mixed.
  2. Slowly pour in the cold sparkling water while continuously whisking until you achieve a smooth batter. Adjust the consistency with more water if needed.
  3. Let the batter rest for 10-15 minutes.
  4. Slice the peeled and cored pineapple into 1/2-inch thick rings and pat them dry with a paper towel.
  5. In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
  6. Dip each pineapple ring into the batter, allowing excess to drip off, then carefully place it in the hot oil.
  7. Fry for 2-3 minutes on each side until golden brown and crispy. Avoid overcrowding the pan.
  8. Remove fried rings with a slotted spoon and place on paper towels to absorb excess oil.
