Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper to prevent sticking.
- In a large bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of ground cinnamon, and a pinch of salt.
- In another bowl, beat together ¾ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Mix in 1 large egg and 1 teaspoon of vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- If you’re using nuts, fold in ½ cup of chopped walnuts or pecans at this point.
- Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Place the baking sheet in the oven and bake for 10-12 minutes, or until the edges are lightly golden.
- Remove the cookies from the oven and let them cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust the tops with powdered sugar if desired.
