Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine 1 cup of crushed graham crackers, 3 tablespoons of melted butter, and 2 tablespoons of sugar. Mix until well combined. Press this mixture firmly into the bottom of lined muffin tins.
- Bake the crusts for about 8-10 minutes, or until they are lightly golden. Remove them from the oven and let them cool.
- In a large mixing bowl, beat 16 ounces of softened cream cheese until smooth. Gradually add in 1/2 cup of sugar, 1/4 cup of sour cream, and 1 teaspoon of vanilla extract. Beat until creamy and well combined.
- Add green food coloring to the cream cheese mixture until you achieve your desired Grinch-like color.
- Spoon the cheesecake filling into the cooled crusts, filling each cup to about 3/4 full. Smooth the tops with a spatula.
- Bake the mini cheesecakes for 15-20 minutes until the centers are set but still slightly jiggly.
- Once baked, remove them from the oven and let them cool at room temperature for about 30 minutes. Then, refrigerate them for at least 2 hours or until completely chilled.
