  • Whipped topping

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine 1 cup of crushed graham crackers, 3 tablespoons of melted butter, and 2 tablespoons of sugar. Mix until well combined. Press this mixture firmly into the bottom of lined muffin tins.
  3. Bake the crusts for about 8-10 minutes, or until they are lightly golden. Remove them from the oven and let them cool.
  4. In a large mixing bowl, beat 16 ounces of softened cream cheese until smooth. Gradually add in 1/2 cup of sugar, 1/4 cup of sour cream, and 1 teaspoon of vanilla extract. Beat until creamy and well combined.
  5. Add green food coloring to the cream cheese mixture until you achieve your desired Grinch-like color.
  6. Spoon the cheesecake filling into the cooled crusts, filling each cup to about 3/4 full. Smooth the tops with a spatula.
  7. Bake the mini cheesecakes for 15-20 minutes until the centers are set but still slightly jiggly.
