  • Author: bakepeek
  • Total Time: 15 minutes
  • Yield: 2-4 servings 1x

Description

Delicious and healthy apple nachos topped with almond butter, granola, chocolate chips, and coconut. This easy-to-make snack or dessert is perfect for sharing and can be customized with your favorite toppings!

Ingredients

Scale
  • 2 large apples (preferably a mix of sweet and tart, like Fuji and Granny Smith)
  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup granola (choose your favorite variety)
  • 1/4 cup mini chocolate chips (dark chocolate for a healthier option)
  • 1/4 cup shredded coconut (unsweetened for a healthier choice)
  • 1 tablespoon honey or maple syrup (optional, for extra sweetness)
  • 1 teaspoon cinnamon (for a warm flavor)
  • 1 tablespoon chia seeds (for added nutrition)
  • 1 tablespoon chopped nuts (like walnuts or pecans, optional)

Instructions

  1. Wash the apples thoroughly under cold water to remove any wax or pesticides. Use a vegetable brush for this step.
  2. Dry the apples with a paper towel or a clean kitchen towel.
  3. Core the apples using an apple corer or a knife. If using a knife, carefully slice around the core to remove it.
  4. Slice the apples into thin rounds, about 1/4 inch thick, or cut them into wedges if preferred.
  5. To prevent browning, toss the apple slices in a little lemon juice if they will sit for a while before serving.
  6. In a small microwave-safe bowl, add the almond butter. Microwave for about 15-20 seconds if it’s too thick to drizzle.
  7. If desired, add honey or maple syrup to sweeten the almond butter. Stir well until combined.
  8. Sprinkle in the cinnamon and mix until everything is well incorporated.
  9. On a large serving platter or a baking sheet lined with parchment paper, arrange the apple slices in a single layer, overlapping slightly for presentation.
  10. Drizzle the prepared almond butter mixture generously over the apple slices.
  11. Sprinkle the granola evenly over the apple slices for added crunch.
  12. Scatter the mini chocolate chips over the top.
  13. If using shredded coconut, sprinkle it on top as well.
  14. For added nutrition, sprinkle chia seeds and chopped nuts over the nachos.
  15. Drizzle a bit more honey or maple syrup over the top if desired.
  16. Sprinkle a little extra cinnamon on top for aroma and flavor.
  17. Serve immediately! Best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for a day or two.

Notes

  • Feel free to swap almond butter for peanut butter, sunflower seed butter, or yogurt for a nut-free option.
  • Experiment with different toppings like dried fruits, seeds, or a sprinkle of sea salt for a sweet and salty combination.
  • For added creaminess and protein, try adding a layer of Greek yogurt between the apple slices.
