  • Unsweetened cocoa powder for dusting

Instructions

  1. Brew about 2 cups of very strong coffee or espresso and let it cool completely.
  2. Once cooled, pour the coffee into a shallow dish. Stir in 1-2 teaspoons of cherry extract and 1 teaspoon of amaretto extract. Adjust the extract amounts to your taste.
  3. Separate 4 large eggs. Place the yolks in a large mixing bowl and the whites in a separate, clean, dry bowl.
  4. To the egg yolks, add ½ cup of granulated sugar. Using an electric mixer, whisk the yolks and sugar together until pale yellow and thick, resembling a light custard (about 3-5 minutes).
  5. Gently fold in 16 ounces of mascarpone cheese into the egg yolk mixture until just combined and smooth.
  6. Add a tiny pinch of salt to the bowl with the egg whites. Whisk the egg whites on medium-high speed until stiff peaks form.
  7. Carefully fold the whisked egg whites into the mascarpone-yolk mixture in two additions to maintain the airy texture.
  8. Grab a rectangular serving dish (about 9×13 inches).
  9. Quickly dip each ladyfinger into the cherry amaretto coffee mixture, ensuring they are moist but not soggy.
  10. Arrange a single layer of the dipped ladyfingers at the bottom of your serving dish.
  11. Spread half of the mascarpone cream evenly over the layer of ladyfingers.
  12. Repeat the process: Dip another batch of ladyfingers, arrange them over the cream, and then top with the remaining mascarpone cream.
