Ingredients
Scale
- ½ cup honey
- ½ cup water
- ½ cup freshly squeezed lemon juice
- ¼ to ⅓ cup unsweetened cranberry juice
- 2–3 tablespoons honey-lemon syrup
- Chilled sparkling water or club soda
- Lemon slices/wedges (optional)
- Fresh berries (optional)
- Fresh mint sprig (optional)
Instructions
- Prepare the Honey-Lemon Syrup: In a small saucepan, combine ½ cup of honey with ½ cup of water. Heat gently over medium-low heat, stirring constantly until the honey is fully dissolved into the water, forming a smooth syrup (about 3-5 minutes). Remove from heat and stir in ½ cup of freshly squeezed lemon juice. Let the syrup cool completely to room temperature.
- Assemble Your Soda: Fill a tall glass generously with ice. Pour ¼ to ⅓ cup of unsweetened cranberry juice into the glass over the ice. Add 2-3 tablespoons of the cooled honey-lemon syrup to the glass, adjusting to taste. Slowly fill the remainder of the glass with chilled sparkling water or club soda, pouring slowly to preserve fizz. Give a gentle stir to combine.
- Garnish and Serve: Place a thin lemon slice or wedge on the rim of the glass or drop it in. Add a few fresh raspberries or cranberries for color and freshness. Add a sprig of fresh mint, gently clapped between hands to release its oils. Enjoy immediately while it's fizzy and cold!

Keywords: Adjust sweetness and tartness by tasting as you go. The honey-lemon syrup can be made ahead and stored in the refrigerator for up to 1-2 weeks. For a twist, consider infusing the syrup with fresh herbs or adding a slice of fresh ginger while heating.
