  • 4 boneless, skinless chicken breasts
  • 1 cup of honey
  • 1 cup of BBQ sauce (your favorite brand)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 1 cup of chicken broth
  • 1 tablespoon of chopped fresh parsley (for garnish)
  • Optional: sliced green onions for garnish

Instructions

  1. In a medium-sized bowl, combine honey, BBQ sauce, soy sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk until well blended.
  2. Place chicken breasts in a large resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring each piece is well coated. Seal the bag or cover the dish with plastic wrap. Marinate in the refrigerator for at least 30 minutes, preferably a few hours or overnight.
  3. Rinse jasmine rice under cold water in a fine-mesh strainer until the water runs clear.
  4. In a medium saucepan, combine rinsed rice and 4 cups of chicken broth. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes.
  5. Turn off heat and let rice sit, covered, for another 10 minutes. Fluff with a fork before serving.
  6. Preheat grill or grill pan over medium-high heat. Oil the grates if using a grill.
  7. Remove chicken from marinade, allowing excess to drip off. Discard leftover marinade.
  8. Place chicken on the grill or grill pan. Cook for about 6-7 minutes on one side without moving.
  9. Flip chicken and cook for another 6-7 minutes, or until internal temperature reaches 165°F (75°C).
  10. Remove chicken from grill and let rest for about 5 minutes.
  11. Slice grilled chicken into strips or bite-sized pieces.
  12. In a large serving bowl or platter, add a generous layer of fluffy jasmine rice as the base.
  13. Arrange sliced chicken on top of the rice.
  14. Drizzle extra BBQ sauce over the chicken for added flavor.
  15. Sprinkle chopped parsley and sliced green onions over the top for garnish.
  16. Serve warm with your favorite sides, such as a green salad or steamed vegetables.
  17. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of chicken broth to keep rice moist.
