- Boneless, skinless chicken breasts
- Hot honey
- BBQ sauce
- Shredded Monterey Jack cheese
- Sharp cheddar cheese
- Flour tortillas
- Sautéed onions
- Bell peppers
- Fresh spinach (optional)
- Jalapeños (optional)
- Olive oil
- Salt
- Pepper
Instructions
- Season the chicken with salt and pepper. In a skillet over medium heat, add a drizzle of olive oil and cook the chicken for about 6-7 minutes on each side or until it's cooked through and reaches an internal temperature of 165°F. Once cooked, let it rest for a few minutes before shredding it.
- In a bowl, mix together your favorite BBQ sauce and hot honey. Adjust the ratio based on how spicy you want your quesadillas to be.
- In the same skillet, add a little more olive oil if necessary, and sauté sliced onions and bell peppers until softened, about 5 minutes. You can add any other vegetables you like at this stage.
- In a large bowl, mix the shredded chicken, sautéed vegetables, and the BBQ-hot honey sauce. Ensure everything is evenly coated.
- Heat a clean skillet over medium heat. Place one tortilla in the skillet, sprinkle a layer of cheese, add a generous amount of the chicken mixture, and top with more cheese. Place another tortilla on top and cook for about 3-4 minutes until the bottom is golden brown.
- Carefully flip the quesadilla using a spatula and cook the other side for another 3-4 minutes until it is golden and the cheese is melted. Repeat with the remaining tortillas and filling.
- Once all quesadillas are cooked, let them cool for a minute, then cut them into wedges. Serve with additional hot honey and BBQ sauce for dipping.
