- 1/4 cup grated Parmesan cheese

- 1/4 teaspoon red pepper flakes (optional, for a spicy kick)
- Parchment paper (for baking)
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium mixing bowl, mix together 1 cup of shredded mozzarella cheese and 1/4 cup of grated Parmesan cheese. Optionally, add 1 teaspoon of Italian seasoning and 1/2 teaspoon of garlic powder for extra flavor.
- Chop 1/2 cup of pepperoni slices into smaller pieces.
- Add the chopped pepperoni to the cheese mixture. If desired, sprinkle in 1/4 teaspoon of red pepper flakes. Stir until well combined.
- Line a baking sheet with parchment paper.
- Using a tablespoon or small cookie scoop, place portions of the cheese and pepperoni mixture onto the prepared baking sheet, leaving about 2 inches of space between each scoop.
- Gently press down on each scoop to flatten them slightly.
- Bake for 8-10 minutes, or until golden brown and crispy. Keep an eye on them as baking times may vary.
- Remove from the oven and let cool on the baking sheet for about 5 minutes.
- Carefully transfer the cheese crisps to a wire cooling rack to prevent sogginess.
- Serve as a crunchy snack or pair with your favorite low-carb dip.
