Instructions
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper.
- In a large mixing bowl, beat together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 3-5 minutes.
- Mix in 1 large egg and 1 teaspoon of vanilla extract until well combined.
- In another bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Gently fold in 1 cup of crushed candy canes, leaving some for sprinkling on top.
- Using a tablespoon or cookie scoop, place dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
- Before baking, sprinkle the remaining crushed candy canes on top of each dough ball.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
