- First things first, I take my chicken breasts or thighs and either slice them in half horizontally or pound them to about ½-inch thick. This ensures they cook quickly and evenly. Then, I generously season both sides with salt, black pepper, and sometimes a little garlic powder and paprika for extra flavor.
- In a large, oven-safe skillet, I heat a tablespoon or two of olive oil over medium-high heat. Once shimmering, I add the seasoned chicken, making sure not to overcrowd the pan. I sear it for about 3-4 minutes per side until it's beautifully golden brown and mostly cooked through. It doesn't need to be fully cooked at this stage, as it will finish in the sauce.
