Instructions

  1. If you're using raw chicken breasts or thighs, begin by seasoning them with a pinch of salt and black pepper. In a large Dutch oven or a heavy-bottomed pot, heat a tablespoon of olive oil or butter over medium-high heat. Sear the chicken for about 3-4 minutes per side, just until golden brown. Remove the chicken from the pot and set it aside to cool slightly. Once cool enough to handle, shred or dice the chicken into bite-sized pieces.
  2. Reduce the heat to medium. Add another tablespoon of oil or butter to the pot if needed.
