  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together 1 cup of softened unsalted butter with 1 cup of granulated sugar and 1 cup of packed brown sugar until light and fluffy.
  3. Mix in 2 large eggs, one at a time, followed by 1 teaspoon of vanilla extract until well combined.
  4. In another bowl, whisk together 2 cups of all-purpose flour, ¾ cup of unsweetened cocoa powder, 1 teaspoon of baking soda, and ½ teaspoon of salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Gently fold in 1 cup of semi-sweet chocolate chips.
  7. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Make a small indent in the center of each cookie and fill it with a few mini marshmallows. Cover with a bit of dough to hide the marshmallows.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
