Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
- Roll out the thawed puff pastry on a lightly floured surface. Cut the pastry into squares or circles, about 4 inches wide.
- In a mixing bowl, combine crumbled feta cheese, chopped olives, diced sun-dried tomatoes, and a handful of fresh herbs. Season with salt and pepper to taste.
- Place a piece of puff pastry on your prepared baking sheet. Spoon a generous amount of the filling onto the center of the pastry, leaving a border around the edges. Top with another piece of pastry and gently press down the edges to seal.
