Description

These no-bake peanut butter oatmeal cookies are a deliciously easy treat that combines creamy peanut butter, rich caramel flavors, and optional chocolate chips and nuts. Perfect for satisfying your sweet cravings without the need for baking!

Ingredients

Scale
  • 1 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 3 cups quick oats
  • 1 cup creamy peanut butter
  • 1 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Melt the Butter: In a medium saucepan, melt 1 cup of unsalted butter over medium heat, stirring occasionally until completely melted.
  2. Add Sugars and Milk: Add 1 cup of packed brown sugar and 1/2 cup of granulated sugar to the melted butter. Pour in 1/2 cup of milk and stir continuously until the sugars dissolve and the mixture comes to a gentle boil.
  3. Boil the Mixture: Allow the mixture to boil for about 2 minutes, stirring constantly to develop a rich caramel flavor. Remove from heat.
  4. Incorporate Vanilla: Stir in 1 teaspoon of vanilla extract into the hot mixture.
  5. Add Quick Oats: Gradually stir in 3 cups of quick oats until well-coated with the caramel mixture.
  6. Incorporate Peanut Butter: Add 1 cup of creamy peanut butter and stir until fully incorporated and the mixture is thick and sticky.
  7. Add Chocolate Chips and Nuts: If desired, fold in 1 cup of chocolate chips and 1/2 cup of chopped nuts for added flavor and texture.
  8. Prepare the Baking Sheet: Line a baking sheet with parchment paper.
  9. Scoop the Mixture: Drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between each scoop.
  10. Flatten the Cookies: Gently flatten each scoop with the back of a fork or your fingers.
  11. Chill the Cookies: Refrigerate the baking sheet for about 30 minutes to 1 hour, or until the cookies are firm.
  12. Check for Firmness: Ensure the cookies are set but still slightly soft in the center. If too soft, chill longer.
  13. Transfer to a Plate: Once set, transfer the cookies to a serving plate. They can be enjoyed immediately or after a few hours for enhanced flavor.
  14. Storing Leftovers: Store any leftovers in an airtight container at room temperature for up to a week.

Notes

  • Feel free to experiment with different nut butters or add-ins like dried fruits or seeds.
  • For a sweet and salty twist, sprinkle a pinch of sea salt on top before chilling.
