Instructions
- Melt the Butter: In a medium saucepan, melt 1 cup of unsalted butter over medium heat, stirring occasionally until completely melted.
- Add Sugars and Milk: Add 1 cup of packed brown sugar and 1/2 cup of granulated sugar to the melted butter. Pour in 1/2 cup of milk and stir continuously until the sugars dissolve and the mixture comes to a gentle boil.
- Boil the Mixture: Allow the mixture to boil for about 2 minutes, stirring constantly to develop a rich caramel flavor. Remove from heat.
- Incorporate Vanilla: Stir in 1 teaspoon of vanilla extract into the hot mixture.
- Add Quick Oats: Gradually stir in 3 cups of quick oats until well-coated with the caramel mixture.
- Incorporate Peanut Butter: Add 1 cup of creamy peanut butter and stir until fully incorporated and the mixture is thick and sticky.
- Add Chocolate Chips and Nuts: If desired, fold in 1 cup of chocolate chips and 1/2 cup of chopped nuts for added flavor and texture.
- Prepare the Baking Sheet: Line a baking sheet with parchment paper.
- Scoop the Mixture: Drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between each scoop.
