- Make the Cranberry Sauce: In a saucepan, combine 2 cups of fresh or frozen cranberries with ½ cup of sugar and the zest and juice of one orange. Cook over medium heat until the cranberries burst and the mixture thickens slightly, about 10 minutes. Remove from heat and let it cool completely.
- Prepare the Cream Filling: In a large mixing bowl, beat 8 ounces of softened cream cheese until smooth. Gradually add ½ cup of sugar and mix until well incorporated. In a separate bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.
- Assemble the Pie: Once the cranberry mixture has cooled, spread it evenly over the chilled graham cracker crust. Then, carefully spoon the cream filling over the cranberry layer, smoothing it out with a spatula. Make sure to cover the cranberry layer completely.
- Chill: Cover the pie with plastic wrap and place it in the refrigerator. Let it chill for at least 4 hours, or overnight if you can wait. This helps the flavors meld together beautifully.
