Ingredients

  • 1 cup basmati or jasmine rice
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • a handful of cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 2 cups vegetable or chicken broth
  • a couple of tablespoons of olive oil
  • salt to taste
  • pepper to taste
  • fresh herbs like parsley or basil (or dried herbs such as oregano or thyme)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Rinse 1 cup of rice under cold water until the water runs clear.
  3. Dice 1 bell pepper, 1 zucchini, and halve a handful of cherry tomatoes.
  4. In a large baking dish, add the rinsed rice, chopped vegetables, and 1 cup of crumbled feta cheese. Season with salt, pepper, and your choice of herbs.
  5. Pour in 2 cups of vegetable or chicken broth.
  6. Add a couple of tablespoons of olive oil over the mixture and stir gently to combine everything evenly.
  7. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes. After that, remove the foil and bake for an additional 10-15 minutes until the rice is tender and the top is slightly golden.
  8. Once baked, remove the dish from the oven and let it sit for a few minutes. Fluff the rice with a fork and garnish with fresh herbs before serving.
