- 1 cup basmati or jasmine rice
- 1 bell pepper, diced
- 1 zucchini, diced
- a handful of cherry tomatoes, halved
- 1 cup crumbled feta cheese
- 2 cups vegetable or chicken broth
- a couple of tablespoons of olive oil
- salt to taste
- pepper to taste
- fresh herbs like parsley or basil (or dried herbs such as oregano or thyme)
Instructions
- Preheat your oven to 200°C (400°F).
- Rinse 1 cup of rice under cold water until the water runs clear.
- Dice 1 bell pepper, 1 zucchini, and halve a handful of cherry tomatoes.
- In a large baking dish, add the rinsed rice, chopped vegetables, and 1 cup of crumbled feta cheese. Season with salt, pepper, and your choice of herbs.
- Pour in 2 cups of vegetable or chicken broth.
- Add a couple of tablespoons of olive oil over the mixture and stir gently to combine everything evenly.
- Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes. After that, remove the foil and bake for an additional 10-15 minutes until the rice is tender and the top is slightly golden.
- Once baked, remove the dish from the oven and let it sit for a few minutes. Fluff the rice with a fork and garnish with fresh herbs before serving.
