Ingredients
- large portobello or cremini mushrooms
- ground beef
- yellow onions
- fresh garlic
- cheddar cheese
- smoked paprika
- cumin
- black pepper
- olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Clean the mushrooms with a damp cloth and remove the stems. Set the caps aside and finely chop the stems for later use.
- In a skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, sautéing until they're soft and fragrant, about 3-4 minutes. Stir in the chopped mushroom stems, cooking for an additional 2 minutes.
- Increase the heat to medium-high and add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
- Add your spices – smoked paprika, cumin, and black pepper – to the skillet. Stir well to combine. If you want, you can also mix in some cooked grains or lentils at this point for added texture.
- Remove the skillet from heat and stir in half of the cheese until melted and well-combined.
- Take the mushroom caps and place them upside down on a baking sheet. Generously fill each cap with the beef and cheese mixture, mounding it slightly on top.
- Sprinkle the remaining cheese over the stuffed mushrooms.
- Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the mushrooms are tender and the cheese is bubbly and golden.
- Once done, remove them from the oven and let them cool slightly before serving.
