- 4–5 large yellow or sweet onions
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 cup long-grain white rice (Basmati or Jasmine)
- 4 cups low-sodium beef broth
- Fresh thyme sprigs
- 1 bay leaf
- 1 tablespoon Worcestershire sauce
- 1 cup shredded Gruyère cheese
- 1 cup shredded Swiss cheese
Instructions
- In a large skillet or Dutch oven over medium-low heat, melt 2 tablespoons of butter with 1 tablespoon of olive oil. Add your thinly sliced onions. Cook, stirring occasionally, for 30-45 minutes, or until the onions are deeply golden brown and very soft. Transfer the caramelized onions to your slow cooker insert.
- Add the uncooked long-grain white rice, beef broth, fresh thyme sprigs, bay leaf, and Worcestershire sauce to the slow cooker with the caramelized onions. Stir everything gently to combine, ensuring the rice is submerged in the liquid.
- Cover the slow cooker and cook on LOW for 2 to 3 hours, or on HIGH for 1 to 1.5 hours. Check for doneness after the minimum time; the rice should be tender and most of the liquid absorbed.
- Once the rice is cooked, remove the thyme sprigs and bay leaf. Give the rice a gentle stir with a fork to fluff it up. If it seems a little wet, let it sit uncovered for 10-15 minutes in the warm slow cooker to absorb any remaining moisture.
- Sprinkle the shredded Gruyère and/or Swiss cheese evenly over the top of the hot rice. Replace the lid and let it sit for another 10-15 minutes, or until the cheese is melted and bubbly.
- Scoop the cheesy, caramelized French Onion Rice into bowls and serve immediately. Garnish with a few fresh thyme leaves or a sprinkle of chopped chives for a fresh touch.
