Ingredients
- Boneless, skinless chicken thighs
- Unsalted butter
- Fresh garlic cloves
- Carrots
- Bell peppers

Instructions
- Season the chicken thighs with salt and pepper on both sides.
- In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
- Place the seasoned chicken in the bottom of the slow cooker. Pour the garlic butter mixture evenly over the chicken.
- Arrange your chopped vegetables on top of the chicken.
- Sprinkle your chosen herbs and seasonings over the top of the vegetables.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, serve the garlic butter chicken and veggies warm.
