  • 2 large cans of good quality baked beans (around 28-ounce each)
  • 1 pound of ground beef sausage
  • 4 to 6 slices of thick-cut beef bacon, diced
  • 1 medium yellow onion, finely chopped
  • 1 small green or red bell pepper, finely diced (optional)
  • 2 to 3 cloves of minced garlic
  • 1 cup of BBQ sauce
  • ½ cup of dark brown sugar
  • 1 to 2 tablespoons of dark molasses
  • 1 to 2 tablespoons of prepared yellow mustard
  • 1 tablespoon of Worcestershire sauce
  • 1 to 2 tablespoons of apple cider vinegar
  • 1 teaspoon of chili powder
  • 1 teaspoon of smoked paprika
  • ½ teaspoon of black pepper
  • a pinch of cayenne pepper (optional)
  • ½ cup of water or beef broth (if needed)

Instructions

  1. Dice the beef bacon into small pieces and cook in a large, oven-safe Dutch oven or heavy-bottomed pot over medium heat until crispy. Transfer to a plate lined with paper towels, leaving some rendered fat in the pot.
  2. In the same pot, add the ground beef sausage and cook over medium-high heat until browned. Drain excess grease, leaving a tablespoon or two in the pot.
  3. Add the chopped onion and bell pepper (if using) to the pot and sauté for 5-7 minutes until softened. Stir in the minced garlic and cook for another minute.
  4. Add the two cans of baked beans to the pot, along with the BBQ sauce, dark brown sugar, molasses, mustard, Worcestershire sauce, apple cider vinegar, chili powder, smoked paprika, black pepper, and cayenne pepper. Stir to combine, adding water or beef broth if the mixture is too thick.
  5. Transfer the mixture to a 9×13-inch baking dish if your pot isn't oven-safe. Bake in a preheated oven at 350°F (175°C) for 45-60 minutes until bubbly and slightly thickened.
