  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 4 cups sparkling water (chilled)
  • Ice cubes
  • Fresh mint leaves (for garnish)
  • Additional raspberries and lemon slices (for garnish)

Instructions

  1. In a medium saucepan, combine 1 cup of fresh raspberries and 1 cup of granulated sugar.
  2. Over medium heat, stir the mixture gently until the sugar dissolves and the raspberries start to break down (about 5-7 minutes).
  3. Once the raspberries are soft and the mixture is bubbling, remove the saucepan from the heat.
  4. Using a fine mesh strainer, strain the raspberry mixture into a bowl or measuring cup to remove the seeds. Press down on the raspberries with a spoon to extract as much liquid as possible.
  5. Let the raspberry syrup cool to room temperature (you can speed this up by placing it in the refrigerator for about 15-20 minutes).
  6. Roll each lemon on the countertop with your palm to help release the juices.
  7. Cut the lemons in half and use a citrus juicer or reamer to extract the juice, removing any seeds that may fall in.
  8. Measure out 1 cup of freshly squeezed lemon juice and set it aside.
  9. In a large pitcher, combine the cooled raspberry syrup and the freshly squeezed lemon juice. Stir well to combine.
  10. Add 4 cups of chilled sparkling water to the pitcher and gently stir to combine, being careful not to lose too much carbonation.
  11. Fill glasses with ice cubes.
  12. Pour the sparkling raspberry lemonade over the ice, filling each glass about three-quarters full.
  13. Garnish each glass with a few fresh raspberries, a slice of lemon, and a sprig of mint.
  14. Serve immediately and enjoy!
