- 1 cup fresh raspberries
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- 1 cup granulated sugar
- 4 cups sparkling water (chilled)
- Ice cubes
- Fresh mint leaves (for garnish)
- Additional raspberries and lemon slices (for garnish)
Instructions
- In a medium saucepan, combine 1 cup of fresh raspberries and 1 cup of granulated sugar.
- Over medium heat, stir the mixture gently until the sugar dissolves and the raspberries start to break down (about 5-7 minutes).
- Once the raspberries are soft and the mixture is bubbling, remove the saucepan from the heat.
- Using a fine mesh strainer, strain the raspberry mixture into a bowl or measuring cup to remove the seeds. Press down on the raspberries with a spoon to extract as much liquid as possible.
- Let the raspberry syrup cool to room temperature (you can speed this up by placing it in the refrigerator for about 15-20 minutes).
- Roll each lemon on the countertop with your palm to help release the juices.
- Cut the lemons in half and use a citrus juicer or reamer to extract the juice, removing any seeds that may fall in.
- Measure out 1 cup of freshly squeezed lemon juice and set it aside.
- In a large pitcher, combine the cooled raspberry syrup and the freshly squeezed lemon juice. Stir well to combine.
- Add 4 cups of chilled sparkling water to the pitcher and gently stir to combine, being careful not to lose too much carbonation.
- Fill glasses with ice cubes.
- Pour the sparkling raspberry lemonade over the ice, filling each glass about three-quarters full.
- Garnish each glass with a few fresh raspberries, a slice of lemon, and a sprig of mint.
- Serve immediately and enjoy!
