Instructions
- Prepare the chiles: If you’re using fresh Hatch chiles, roast them over an open flame or under a broiler until the skins are charred. Place them in a bowl and cover with plastic wrap for about 10 minutes. Once cooled, peel off the skins, remove the seeds, and chop them finely.
- Cook the chicken: In a large skillet, heat a tablespoon of oil over medium heat. Season the chicken thighs with salt, pepper, and half of your spice mix (cumin, paprika, cayenne). Cook the chicken for about 5-7 minutes per side, or until it’s cooked through and has a nice golden color. Remove from the pan and let it rest for a few minutes before shredding or chopping into bite-sized pieces.
- Sauté the aromatics: In the same skillet, add a little more oil if needed, and toss in the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion becomes translucent. Add the chopped Hatch chiles and the remaining spices, stirring well to combine.
- Combine chicken and chiles: Add the cooked chicken back to the skillet with the onion and chile mixture. Stir everything together, allowing the flavors to meld for another 2-3 minutes. Taste and adjust seasoning as necessary.
- Warm the tortillas: In a separate skillet, heat the mini corn tortillas over medium heat for about 30 seconds on each side until warmed and pliable. You can also wrap them in foil and warm them in the oven if you prefer.
- Assemble the tacos: Place a generous spoonful of the spicy chicken mixture onto each mini tortilla. Top with your favorite garnishes like fresh cilantro, diced tomatoes, avocado slices, and a squeeze of lime juice.
