  • 2 ripe peaches
  • 12 jalapenos
  • 2 cloves of garlic
  • 1/4 cup of olive oil
  • juice of 2 limes
  • 2 tablespoons of honey

Instructions

  1. In a bowl, combine 1/4 cup of olive oil, the juice of 2 limes, 2 tablespoons of honey, 2 minced garlic cloves, and 1-2 finely chopped jalapenos. Mix well.
  2. Place 4 boneless, skinless chicken breasts in a resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal or cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
  3. While the chicken marinates, pit and slice 2 ripe peaches. Set aside.
  4. Heat a grill or skillet over medium-high heat. Remove the chicken from the marinade (discard the marinade) and grill or pan-sear for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. In the last few minutes of cooking, add the peach slices to the grill or skillet. Cook until they are slightly caramelized and heated through, about 2-3 minutes.
  6. Once the chicken is cooked, plate it and top with the grilled peaches. Garnish with fresh cilantro or parsley if desired.
