Description
Jalapeno Peach Chicken is a delightful fusion of sweet and spicy flavors that will make your taste buds dance with joy. This dish combines succulent chicken pieces marinated in juicy peaches and zesty jalapenos, creating a refreshing and exciting meal.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 ripe peaches
- 1–2 jalapenos
- 2 cloves of garlic
- 1/4 cup of olive oil
- juice of 2 limes
- 2 tablespoons of honey
Instructions
- In a bowl, combine 1/4 cup of olive oil, the juice of 2 limes, 2 tablespoons of honey, 2 minced garlic cloves, and 1-2 finely chopped jalapenos. Mix well.
- Place 4 boneless, skinless chicken breasts in a resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal or cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
- While the chicken marinates, pit and slice 2 ripe peaches. Set aside.
- Heat a grill or skillet over medium-high heat. Remove the chicken from the marinade (discard the marinade) and grill or pan-sear for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- In the last few minutes of cooking, add the peach slices to the grill or skillet. Cook until they are slightly caramelized and heated through, about 2-3 minutes.
- Once the chicken is cooked, plate it and top with the grilled peaches. Garnish with fresh cilantro or parsley if desired.

Keywords: If you love heat, leave the seeds in the jalapenos. For milder flavor, remove the seeds and membranes before chopping. This dish pairs wonderfully with a side of cilantro lime rice or a fresh green salad.
