- 2 pounds Yukon Gold or red potatoes
- 6 slices of bacon
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar

- 1/2 cup chopped green onions
Instructions
- Start by washing and peeling (if desired) about 2 pounds of Yukon Gold or red potatoes. Cut them into bite-sized cubes and place them in a large pot of salted water.
- Bring the water to a boil, then reduce the heat to medium and simmer until the potatoes are fork-tender, about 10-15 minutes. Be careful not to overcook them! Drain and allow them to cool slightly.
- While the potatoes are boiling, cook about 6 slices of bacon in a skillet over medium heat until crispy. Transfer them to a paper towel-lined plate to drain, then crumble them into pieces once cooled.
- In a large bowl, combine 1 cup of mayonnaise, 2 tablespoons of Dijon mustard, 1 tablespoon of apple cider vinegar, salt, pepper, and a sprinkle of paprika. Mix well until creamy and smooth.
- Once the potatoes have cooled slightly, add them to the bowl with the dressing. Add in the crumbled bacon, 1 cup of shredded cheddar cheese, and 1/2 cup of chopped green onions. Gently fold everything together until the potatoes are evenly coated.
- Cover the bowl with plastic wrap and refrigerate the potato salad for at least 1 hour to allow the flavors to meld together. If you can let it chill for longer, that’s even better!
- Before serving, give the potato salad a good stir, taste, and adjust any seasonings if needed. Garnish with additional green onions or paprika for a pop of color.
