Ingredients

  • Softened butter
  • Powdered sugar
  • Lemon juice
  • Lemon zest
  • Heavy cream
  • Strawberry lemonade syrup
  • Fresh strawberries
  • Lemon slices

Instructions

  1. In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until creamy.
  2. Gradually add the powdered sugar, mixing on low speed until combined. Then, increase the speed to medium and beat until fluffy.
  3. Add the lemon juice and lemon zest, mixing until well incorporated. If the frosting is too thick, add heavy cream one tablespoon at a time until you reach your desired consistency.
  4. Once the cakes are completely cooled, place one layer on a serving plate or cake stand. Drizzle a portion of the strawberry lemonade syrup over the top.
  5. Spread a layer of lemon buttercream frosting over the syrup. Repeat this process with the second layer, then place the third layer on top.
  6. Frost the top and sides of the cake with the remaining lemon buttercream frosting, smoothing it out as desired.
