  • 2 cups water
  • 1 pinch salt
  • 1 tablespoon olive oil
  • 1 finely chopped onion
  • 2 minced garlic cloves
  • 1 cup breadcrumbs
  • Salt to taste
  • Pepper to taste
  • 1 pot of water for cooking knödel
  • 2 tablespoons curry powder
  • 1 can coconut milk
  • 1 cup vegetable broth

Instructions

  1. Rinse 1 cup of red lentils under cold water until the water runs clear. In a saucepan, combine the lentils with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the lentils are tender. Drain any excess water and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 finely chopped onion and sauté until translucent, about 5 minutes. Stir in 2 minced garlic cloves and cook for another minute until fragrant.
  3. In a large bowl, combine the cooked lentils, sautéed onion and garlic, 1 cup of breadcrumbs, salt, and pepper to taste. Form the mixture into small balls, about the size of a golf ball.
  4. Bring a pot of water to a gentle boil and carefully drop the knödel in. Cook for about 10-12 minutes, or until they float to the surface. Remove with a slotted spoon and set aside on a plate.
  5. In the same skillet, add another tablespoon of olive oil if needed. Sprinkle in 2 tablespoons of curry powder and cook for 30 seconds. Pour in 1 can of coconut milk and 1 cup of vegetable broth, stirring to combine. Let the sauce simmer for about 5-7 minutes, allowing it to thicken slightly.
  6. Gently place the knödel in the curry sauce and let them soak up the flavors for a couple of minutes. Serve hot, garnished with fresh cilantro if desired!
