- 2 cups vegetable broth

- 1 cup vegetable broth
Instructions
- Rinse 1 cup of red lentils under cold water until the water runs clear. In a pot, combine the lentils with 2 cups of vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 15 minutes or until soft. Drain any excess liquid if necessary.
- In a large mixing bowl, combine the cooked lentils, 1 small finely chopped onion, 2 minced garlic cloves, and 1 cup of breadcrumbs. Season with salt and pepper to taste. Mix until well combined. If the mixture is too wet, add a bit more breadcrumbs.
- With your hands, form small balls (about the size of a golf ball) from the mixture. Place them on a plate and set aside.
- In a large pan, heat 1 tablespoon of oil over medium heat. Add the remaining chopped onion and sauté until translucent. Stir in 2 tablespoons of curry powder and cook for another minute to release the flavors.
- Pour in 1 can of coconut milk and 1 cup of vegetable broth. Stir well and let the sauce simmer for about 5 minutes.
- Gently add the lentil dumplings to the simmering sauce. Cover the pan and let them cook for about 10-15 minutes. They will absorb the sauce flavors and become even more delicious.
- Once the dumplings are cooked through, taste the sauce and adjust seasoning if needed. Serve hot, garnished with fresh cilantro or parsley if desired.
