Ingredients
Scale
- 500 g fresh asparagus
- 200 g cooked ham
- 200 ml cream
- 100 g grated cheese
- 1 bunch fresh parsley
- 1 lemon (juice and zest)
- Salt (for blanching asparagus)
- Pepper (to taste)
- ml oil for frying
Instructions
- Start by preparing the asparagus: Trim the tough ends off 500 g of fresh asparagus. Bring a large pot of salted water to a boil. Once boiling, add the asparagus and blanch for 3-4 minutes until they turn bright green but remain crisp. Drain and cool in ice water to stop the cooking process, which preserves their vibrant color.
- Next, preheat your oven to 180°C (350°F). This will ensure that your dish cooks evenly and thoroughly once assembled.
- Prepare the filling: Take 200 g of cooked ham and cut it into strips. Lay out the cooked asparagus on a clean surface and place a strip of ham at the bottom of each stalk. Roll the asparagus tightly in the ham, ensuring the ends are tucked in to avoid unrolling during cooking.
- In a medium bowl, combine 200 ml of cream, the zest and juice of 1 lemon, and a pinch of salt and pepper. Whisk together until well-blended. This creamy mixture will serve as the sauce for your dish.
- In a baking dish, pour a small amount of the creamy sauce to cover the bottom. Arrange the asparagus rolls seam-side down in the dish. Once all rolls are placed, pour the remaining sauce over the top evenly.
- Sprinkle 100 g of grated cheese over the rolls. This will create a deliciously golden and bubbly crust as it bakes. If you like, you can experiment with different cheese varieties for added flavor.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown, and the sauce is bubbling. Keep an eye on it to avoid burning the cheese, ensuring it turns a lovely golden color.
- Once done, remove from the oven and let it sit for about 5 minutes before serving. This allows the flavors to meld together and makes it easier to serve. Garnish with freshly chopped parsley for a bright finish.

Keywords: Be careful not to over-blanch the asparagus. You want them tender but still crisp; overcooked asparagus will lose its vibrant color and crunch. Use a shallow baking dish to allow for even cooking. Experiment with different ratios of cream to cheese to find your ideal balance of richness.
