Description

These Cinnamon Roll Sugar Cookies combine the comforting flavors of classic cinnamon rolls with the delightful texture of cookies. Soft, chewy, and drizzled with a creamy glaze, they are a treat everyone will enjoy.

Ingredients

Scale
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for icing)
  • 1 tablespoon milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). This ensures that the cookies bake evenly and rise properly.
  2. In a medium bowl, whisk together 2 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
  3. In a separate large bowl, cream together 1 cup of softened unsalted butter and 1 1/2 cups of granulated sugar using a hand mixer or stand mixer on medium speed. Beat until the mixture is light and fluffy, about 2-3 minutes.
  4. Add 1 large egg, 1 teaspoon of ground cinnamon, and 1 teaspoon of vanilla extract to the butter mixture. Mix well until fully combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid over-mixing.
  6. Using a tablespoon, drop rounded mounds of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  8. While the cookies are baking, prepare the icing by whisking together 1/2 cup of powdered sugar and 1 tablespoon of milk until smooth.
  9. Once the cookies are done baking, remove them from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, drizzle the icing over the cookies with a spoon or piping bag.
