  • 1 cup jasmine rice
  • 2 navel oranges, juiced
  • 2 garlic cloves, minced
  • 2 tbsp coconut aminos
  • 2 tbsp honey
  • 1/4 tsp ginger
  • 1/2 tsp salt
  • dash of pepper
  • 1 tbsp olive oil
  • 1 tbsp arrowroot powder + 2 tbsp water
  • optional: fresh cilantro
  • optional: red pepper flakes

Instructions

  1. Begin by heating 1 tablespoon of olive oil in a medium-sized pan over medium-high heat. Wait until the oil shimmers, indicating it’s ready.
  2. Add the 12-15 frozen shrimp to the pan, ensuring they are spread out evenly. Season with 1/2 teaspoon salt and a dash of pepper. Cook for about 4-5 minutes, flipping halfway through, until the shrimp are pink and opaque.
  3. Once the shrimp are cooked, remove them from the pan and set aside on a plate. Allow the pan to cool slightly before moving on to the sauce.
  4. In a small bowl, combine the juice of 2 navel oranges, 2 tablespoons of coconut aminos, 2 minced garlic cloves, 2 tablespoons of honey, 1/4 teaspoon of ginger, and another dash of pepper. Stir until well combined.
  5. In a separate bowl, mix 1 tablespoon of arrowroot powder with 2 tablespoons of water until smooth. This will be used to thicken your sauce.
  6. Return the pan to medium heat, pour in the orange sauce, and stir continuously to prevent it from sticking to the pan. Cook for about 2-3 minutes until it starts to bubble.
  7. Next, add in the arrowroot mixture to the sauce. Continue stirring for another 1-2 minutes until the sauce thickens to your desired consistency. Watch for it to coat the back of a spoon.
  8. Finally, add the cooked shrimp back into the pan, ensuring they are well-coated with the sauce. Remove from heat after about 1 minute.
