- 1.5 pounds chicken breast, cut into bite-sized pieces
- 3 cups fresh spinach
- 1.5 cups cherry tomatoes, halved
- 1 large red bell pepper, diced
- 1 medium yellow squash, sliced
- 4 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 0.5 teaspoon red pepper flakes
- Zest of 1 lemon
- Salt and black pepper to taste
Instructions
- Pat the chicken breast pieces dry with paper towels. Season generously with salt, black pepper, and half of the dried oregano.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken pieces to the pan. Sear for 5-6 minutes until golden-brown.
- Transfer the cooked chicken to a plate. In the same skillet, add the remaining olive oil and sauté the minced garlic for about 30 seconds until fragrant.
- Add the diced red bell pepper and sliced yellow squash to the skillet. Cook for 4-5 minutes until the vegetables are softened but still crisp.
- Toss in the halved cherry tomatoes and let them cook for another 2 minutes until they begin to soften and release their juices.
- Return the seared chicken to the skillet, then add the fresh spinach, remaining oregano, red pepper flakes, and lemon zest. Toss everything together and cook for 2-3 minutes until the spinach has wilted.
- Remove from heat, taste, and adjust seasoning if necessary. Serve immediately while hot.
