  • 1.5 pounds chicken breast, cut into bite-sized pieces
  • 3 cups fresh spinach
  • 1.5 cups cherry tomatoes, halved
  • 1 large red bell pepper, diced
  • 1 medium yellow squash, sliced
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • Zest of 1 lemon
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken breast pieces dry with paper towels. Season generously with salt, black pepper, and half of the dried oregano.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken pieces to the pan. Sear for 5-6 minutes until golden-brown.
  3. Transfer the cooked chicken to a plate. In the same skillet, add the remaining olive oil and sauté the minced garlic for about 30 seconds until fragrant.
  4. Add the diced red bell pepper and sliced yellow squash to the skillet. Cook for 4-5 minutes until the vegetables are softened but still crisp.
  5. Toss in the halved cherry tomatoes and let them cook for another 2 minutes until they begin to soften and release their juices.
  6. Return the seared chicken to the skillet, then add the fresh spinach, remaining oregano, red pepper flakes, and lemon zest. Toss everything together and cook for 2-3 minutes until the spinach has wilted.
  7. Remove from heat, taste, and adjust seasoning if necessary. Serve immediately while hot.
