Ingredients

Scale
  • 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1 tablespoon rice wine or dry sherry (optional)
  • 2 tablespoons vegetable oil (divided)
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets (optional)
  • 2 green onions, chopped (for garnish)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1 teaspoon sesame oil
  • Freshly ground black pepper to taste

Instructions

  1. Start by marinating the beef. In a bowl, combine the beef slices with 1 tablespoon soy sauce, 1 tablespoon cornstarch, 1 teaspoon sesame oil, and 1 tablespoon rice wine (if using). Mix well to coat the beef evenly and let it marinate for at least 15 minutes.
  2. While the beef is marinating, prepare your vegetables. Slice the onion and bell peppers, and chop the green onions. Mince the garlic and ginger.
  3. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Once the oil is shimmering, add the marinated beef in a single layer. Sear for about 2-3 minutes until the edges are browned but not fully cooked through.
  4. Remove the beef from the pan and set it aside. In the same pan, add another tablespoon of vegetable oil. Toss in the sliced onion, and stir-fry for about 2 minutes until it becomes translucent.
  5. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  6. Add the sliced bell peppers and broccoli florets (if using) to the pan. Stir-fry for about 3-4 minutes until the peppers are tender-crisp.
  7. Return the beef to the pan. In a separate bowl, whisk together the sauce ingredients: 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon hoisin sauce, 1 tablespoon sugar, and the cornstarch slurry. Pour this sauce over the beef and vegetables.
  8. Cook everything together for another 2-3 minutes, stirring constantly until the sauce thickens and coats the beef and veggies.
  9. Remove the pan from the heat and sprinkle with freshly ground black pepper and chopped green onions before serving.
