Ingredients
Scale
- 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 1 tablespoon rice wine or dry sherry (optional)
- 2 tablespoons vegetable oil (divided)
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets (optional)
- 2 green onions, chopped (for garnish)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sugar
- 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
- 1 teaspoon sesame oil
- Freshly ground black pepper to taste
Instructions
- Start by marinating the beef. In a bowl, combine the beef slices with 1 tablespoon soy sauce, 1 tablespoon cornstarch, 1 teaspoon sesame oil, and 1 tablespoon rice wine (if using). Mix well to coat the beef evenly and let it marinate for at least 15 minutes.
- While the beef is marinating, prepare your vegetables. Slice the onion and bell peppers, and chop the green onions. Mince the garlic and ginger.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Once the oil is shimmering, add the marinated beef in a single layer. Sear for about 2-3 minutes until the edges are browned but not fully cooked through.
- Remove the beef from the pan and set it aside. In the same pan, add another tablespoon of vegetable oil. Toss in the sliced onion, and stir-fry for about 2 minutes until it becomes translucent.
- Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
- Add the sliced bell peppers and broccoli florets (if using) to the pan. Stir-fry for about 3-4 minutes until the peppers are tender-crisp.
- Return the beef to the pan. In a separate bowl, whisk together the sauce ingredients: 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon hoisin sauce, 1 tablespoon sugar, and the cornstarch slurry. Pour this sauce over the beef and vegetables.
- Cook everything together for another 2-3 minutes, stirring constantly until the sauce thickens and coats the beef and veggies.
- Remove the pan from the heat and sprinkle with freshly ground black pepper and chopped green onions before serving.
