  • 1/4 cup (50 g) granulated sugar
  • Zest of 1 lemon

  • Fresh mint leaves (optional)
  • Additional powdered sugar for dusting

Instructions

  1. In a mixing bowl, combine 1 cup of mascarpone cheese and 1/2 cup of powdered sugar. Use a hand mixer to beat them together on medium speed until smooth and creamy, about 2-3 minutes. Ensure there are no lumps for a velvety texture.
  2. Add in 1 cup of heavy whipping cream, 1/4 cup of fresh lemon juice, lemon zest from 2 lemons, and 1 teaspoon of vanilla extract. Mix on low speed until combined, then increase to medium-high and whip until soft peaks form, about 4-5 minutes. Avoid overwhipping, as it can become grainy.
