Instructions
- In a mixing bowl, combine 1 cup of mascarpone cheese and 1/2 cup of powdered sugar. Use a hand mixer to beat them together on medium speed until smooth and creamy, about 2-3 minutes. Ensure there are no lumps for a velvety texture.
- Add in 1 cup of heavy whipping cream, 1/4 cup of fresh lemon juice, lemon zest from 2 lemons, and 1 teaspoon of vanilla extract. Mix on low speed until combined, then increase to medium-high and whip until soft peaks form, about 4-5 minutes. Avoid overwhipping, as it can become grainy.
- In a separate bowl, whisk together 1/2 cup fresh lemon juice, 1/4 cup water, 1/4 cup granulated sugar, and the zest of 1 lemon until the sugar dissolves completely. This syrup will soak the ladyfingers.
