  • Yield: 4 servings 1x

Description

This Zucchini Goat Cheese Stack is a delightful blend of roasted zucchini and creamy goat cheese, perfect for any occasion. It’s a visually stunning appetizer that bursts with flavor and freshness.

Ingredients

Scale
  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 8 ounces goat cheese, softened
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). This preheating step is crucial for achieving perfectly roasted zucchini.
  2. In a medium-sized bowl, combine 2 tablespoons of olive oil, 1 teaspoon of balsamic vinegar, and salt and pepper to taste. Whisk until well combined.
  3. Add the sliced zucchini to the bowl and toss until all pieces are evenly coated with the olive oil mixture.
  4. Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper. Roast in the oven for about 15 minutes, or until the zucchini is tender and slightly golden on the edges.
  5. While the zucchini is roasting, prepare the goat cheese mixture. In a separate bowl, combine 8 ounces of softened goat cheese with 1/4 cup of chopped fresh basil. Mix until well combined.
  6. Once the zucchini is done roasting, remove it from the oven and allow it to cool slightly for about 5 minutes.
  7. On a serving platter, start layering the zucchini slices. Spread a small amount of the goat cheese mixture between each slice.
  8. Top the stack with 1 cup of halved cherry tomatoes and sprinkle 1/2 cup of grated Parmesan cheese on the top.
  9. Drizzle any remaining olive oil mixture over the stack before serving.
  10. Serve warm or at room temperature for the best flavor experience.

Keywords: Be careful not to over-roast the zucchini. Use a sharp knife or mandoline for even zucchini slices. For extra flavor, consider adding minced garlic to the olive oil mixture.
